Ingredients for 6 servings:
- 1 pineapple
- 2 vanilla pods
- 2 tbsp oil
- 5 tbsp brown rum
- 1 stalk(s) cinnamon
- 2 tbsp honey
- 150 ml water

Working time approx. 25 minutes; Total time approx. 25 minutes
Peel the pineapple, remove any brown eyes, and cut the flesh into 2cm thick slices. Halve the vanilla pod lengthwise and scrape out the seeds. Heat oil in a pan. Fry the pineapple slices in batches for 2 minutes on each side. Remove the pineapple from the pan. Add the rum, cinnamon stick, honey, and 150ml water to the pan and bring to a boil. Add the vanilla pod and seeds. Allow the liquid to reduce. Add the pineapple back in and marinate in the liquid for 10 minutes. Arrange the warm pineapple slices on plates and pour the syrup over them. Serve with vanilla ice cream or vanilla sauce.
