Ingredients for 4 servings:

  • 3 kg plum(s)
  • 500 g gelling sugar
  • 1 lemon(s), untreated (peel cut into strips)
  • 2 stalk(s) cinnamon
  • 2 pieces of anise (star anise)
  • Ginger powder or cloves to taste

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Wash, dry, and pit the plums. Finely chop using a blender or meat grinder. Pour the puree into the oven’s drip tray and mix with the other ingredients. Cook at 175°C for about 90 minutes, stirring frequently (if a skin has formed). Wedge a wooden spoon into the oven door to prevent it from closing completely. This will allow the moisture to escape and the mixture to reduce. Remove the lemon zest, and possibly also the star anise, cinnamon, and cloves. While still hot, pour into prepared jars and seal immediately.
