Ingredients for 4 servings:

  • 1 chili pepper(s), jalapeno or other fresh
  • ½ cup cheese, grated
  • 6 tortillas (preferably corn tortillas)
  • 1 large tomato(s), pitted, finely chopped
  • 3 tbsp spring onions, finely chopped
  • 1 tbsp coriander greens, finely chopped
  • 1 chicken breast, cooked and shredded, guacamole, salsa fresca

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Mexican snack – light and delicious!

Cut the chili pepper lengthwise, remove the seeds, remove the membrane, and finely chop. Sprinkle half of the tortilla with cheese, then top with chili, spring onions, cooked chicken, tomatoes, and basil. Fold over and heat in a medium-hot pan for 3-4 minutes, turning once. Remove from the pan and keep warm in the oven. Cut once and serve with guacamole and salsa fresca.
