Low-carb zucchini boats

Ingredients for 1 servings:

  • 1 large zucchini
  • 200 g minced meat (beef)
  • 100 g cottage cheese
  • 1 garlic clove(s)
  • 1 tomato(s)
  • salt and pepper
  • Paprika powder
  • e.g. Tabasco
  • some olive oil
  • 50 g low-fat curd cheese
  • some chives, dried

Working time approx. 25 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 55 minutes

First, halve the zucchini lengthwise with a knife and hollow out the contents. Then lightly sprinkle with salt to draw out any remaining water. Finely chop the garlic clove and tomato and place them in a bowl with the ground beef and cottage cheese. Season with salt, pepper, paprika, and Tabasco, if desired. Mix everything well. Divide the mixture evenly among the zucchini halves. Place the boats in a dish lightly greased with olive oil. Bake in a preheated oven at 180°C for 20-30 minutes. Make a dip from the low-fat quark with chives and season to taste.
