Ingredients for 4 servings:

  • 1 cucumber(s)
  • 6 large tomatoes
  • 1 tbsp oil
  • 3 tbsp vegetable broth
  • 1 bunch of fresh herbs (parsley and/or chives)

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Tomato-cucumber salad

First, peel the cucumber and dice it into small cubes. Then, wash the tomatoes, dry them, and dice them into small cubes. Place both in a small bowl. Now, in a cup or separate bowl, combine the oil and vegetable broth and season with the previously chopped herbs. Pour the finished dressing over the cucumber and tomato mixture.
