Ingredients for 4 servings:
- 1 head of lettuce (Lollo Bionda or leaf lettuce)
- 1 head of frisée lettuce
- 1 apple, e.g. Jonagold
- 1 bulb(s), e.g. Abate
- 4 tbsp vinegar (white wine vinegar)
- 8 tbsp olive oil
- 1 tsp mustard
- Salt
- Pepper, freshly ground
- Sugar
- 1 bunch of chives
- 1 bunch of parsley
- 2 tbsp sunflower seeds
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Trim, wash, and roughly chop the lettuce. Wash, trim, and slice the apple and pear. Combine the vinegar, oil, and mustard. Season with salt, pepper, and sugar. Wash the herbs, shake dry, finely chop, and mix into the sauce. Roast the sunflower seeds in a pan without fat. Mix the salad ingredients in a large bowl. Drizzle with the herb vinaigrette and sunflower seeds.
