Low-carb stuffed peppers à la Dani

Ingredients for 1 servings:

  • 1 large bell pepper(s)
  • 75 g goat’s cheese
  • 1 tbsp low-fat curd cheese
  • 1 tbsp Gouda, grated
  • 1 tbsp sunflower seeds
  • 1 tsp sesame seeds
  • 1 tsp chives, chopped
  • Salt
  • 2 slices goat cheese (goat camembert)

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Carefully cut off the top of the pepper and remove any seeds and white pith. Mix the remaining ingredients, except for the Camembert, thoroughly and season generously with salt. Fill the pepper with the mixture, place two slices of Camembert on top, and bake in an ovenproof dish or casserole dish at 200°C for about 15 minutes. I served it with a fresh salad. This dish is perfect for a low-carb diet.
