Vegan Chickpea Spätzle

Ingredients for 2 servings:

  • 100 g rice flour (wholemeal rice flour)
  • 40 g chickpea flour
  • 2 tbsp soy milk (soy drink)
  • 120 ml water
  • 1 tsp salt

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

gluten-free pasta

Stir together the ingredients for the dough and let it rest briefly. Then scrape it over a spaetzle grater into boiling water. Let the spaetzle rise to the surface (this happens quite quickly; 3 minutes is usually enough) and then drain it through a sieve.
