Salmon fillets in cream sauce

Ingredients for 2 servings:

  • 300 g salmon fillet(s)
  • 150 ml sweet cream
  • 120 ml vegetable stock
  • 1 tsp mustard, medium hot
  • 1 dashes lemon juice
  • 1 tbsp butter, cold
  • 1 tbsp olive oil
  • 1 tbsp water
  • salt and pepper

Working time approx. 15 minutes; Total time approx. 15 minutes

simple and super delicious

Season the salmon fillet with salt and pepper. Briefly sear one side in a pan with olive oil over medium heat. Add 1 tablespoon of water, cover, and simmer over low heat for about 15 minutes. Then carefully lift the fish from the pan and keep warm. Bring the vegetable stock and mustard to a boil in the pan. Add a squeeze of lemon juice. Add the cream, season with salt and pepper, and bring to a boil. While cooking, stir in the cold butter a little at a time – this will thicken the sauce. Plate the salmon with the sauce and serve. Serve with potatoes and vegetables (e.g. broccoli or peas).
