Heart goulash à la Gabi

Ingredients for 4 servings:

  • 500 g heart(s) (beef or pork heart)
  • 4 tbsp onion(s), diced
  • 30 g fat
  • 500 water, – 750 ml
  • ¼ tsp sweet paprika powder
  • 1 bay leaf
  • ½ tsp salt
  • ¼ tsp pepper
  • 1 tbsp, leveled flour
  • 2 tbsp tomato paste
  • Vinegar
  • 1 pinch(s) of sugar

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 30 minutes

Wash the heart pieces, remove the ribs and tendons. Dice the meat and pat dry. Brown the onion and meat cubes in the hot fat. Add the water. Stir in the paprika and bay leaf and braise the meat for about 60 minutes. Season with salt and pepper. Mix the flour with a little cold water. Use this to thicken the sauce and season to taste with tomato paste, vinegar, and sugar.
