One Pot Pasta – Italian miracle pot

Ingredients for 2 servings:

  • 1 onion(s)
  • 1 garlic clove(s)
  • 1 handful of basil
  • 100 g leaf spinach or 3 thalers frozen spinach
  • 250 g pasta (farfalle, penne or fusilli)
  • 1 can of chopped tomatoes (approx. 400 g)
  • 2 tsp marjoram
  • ¼ tsp chili powder
  • 2 tbsp olive oil
  • 1 tbsp cream cheese or e.g. soy cuisine
  • 1 ½ cups vegetable broth, more if needed
  • salt and pepper

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

The empty tomato can serves as a measuring cup for the broth. This one-pot pasta recipe is ready in 15 minutes at the most, as there’s not much chopping to do and everything cooks in one pot. It’s also great for serving large portions in a nice large pot. First, peel and finely chop the onion and garlic. Then chop the basil a little finely, along with the fresh spinach. Now add all the ingredients to a large pot, pour in the vegetable broth, and cook the pasta until tender. Add more liquid if needed. Season to taste and serve.
