Oriental tomato and feta spread

Ingredients for 4 servings:

  • 2 garlic cloves
  • 1 jar of dried tomatoes in oil (200 – 300 g)
  • 200 g cream cheese
  • 200 g sheep’s cheese or feta
  • 1 tsp cumin powder
  • ½ tsp coriander powder
  • ¼ tsp cinnamon powder (optional)
  • ½ tsp sumac
  • 1 tbsp tahini (sesame paste)
  • 1 dash of lemon juice or pomegranate syrup
  • 2 tbsp coriander, fresh, finely chopped
  • Salt and pepper to taste

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel and finely chop the garlic. Finely chop the sun-dried tomatoes and reserve the oil from the jar. Crumble the feta cheese into a bowl and mix with the cream cheese until creamy. Add the oil from the sun-dried tomatoes to the cheese mixture. Add the cumin, coriander, cinnamon, and sumac. Then mix in the chopped garlic and tomatoes. Add the sesame paste and lemon juice or pomegranate syrup and mix well. Fold in the chopped coriander. Season with salt and pepper (add salt carefully, as the feta cheese is already salty). Garnish the spread with fresh herbs, such as coriander leaves, and enjoy on fresh bread, baguette, or flatbread. Tip: The oil from the tomatoes adds extra flavor to the spread and makes it even smoother. We recommend letting it sit in the refrigerator for a while so the flavors can fully develop.
