Beer Bacon Chili Cheese Sauce

Ingredients for 4 servings:

  • 150g Cheddar
  • 100 g mountain cheese or Gouda
  • 3 tbsp jalapeño(s), pickled
  • 1 pack of bacon
  • 40 g butter
  • 50 g flour
  • 375 ml beer, dark or lager (the main thing is that it is spicy)
  • 500 ml milk
  • 1 tsp smoked paprika powder
  • 1 tsp sweet paprika powder
  • 2 tsp garlic granules

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Cut the cheddar and mountain cheese into thin strips, and dice the bacon and jalapeños. Fry the diced bacon in a pan without adding any more fat until slightly crispy, then remove from the pan. Melt the butter in the same pot. Then add the flour and stir with a whisk. Deglaze with the milk and beer and simmer for 2 minutes. Add the spices and simmer for another 5 minutes. Add the cheese and melt over low heat. It’s best not to let the sauce boil at this point. Once the cheese has melted, stir in the chopped jalapeños. Tastes great with chunky bratwurst or grilled chorizo. It also works for dipping nachos or as a burger sauce.
