Ingredients for 4 servings:

  • 500 g pasta
  • 1 bell pepper(s)
  • ½ cucumber(s)
  • 1 small can of corn
  • 2 tomatoes
  • 200 g ham, very thinly sliced
  • 1 bunch of rocket
  • 2 eggs
  • 1 tbsp mayonnaise, reduced fat
  • 1 cup of natural yogurt (3.5%)
  • Vinegar
  • 1 handful of mixed fresh herbs (chives, parsley, chervil)
  • 1 tsp mustard, medium hot
  • Salt
  • pepper
  • 1 pinch(s) of sugar

Cook the pasta according to the package instructions and let cool. Hard-boil the eggs and let cool as well. Meanwhile, wash the tomatoes, cucumber, bell peppers, fresh herbs, and rocket. Remove the stalks and skins from each one, or wash and then dice or finely chop. Cut the ham into strips. Make a dressing with the mayonnaise, natural yogurt, mustard, vinegar, salt and pepper, sugar, and herbs. Mix in the pasta, diced tomatoes, cucumber, bell peppers, sweetcorn, ham strips, and finely chopped rocket. Finally, peel and quarter the eggs, and garnish the salad with them. It tastes very light and fresh, and is something different from the usual, heavy mayonnaise version! This salad also applies: if served as a side dish, it will serve more than 4 people.
