Ingredients for 1 servings:
- 50 g pistachios, salted
- 50 g walnuts
- 50 g pine nuts
- 100 g olives, black, not dried
- 100 g Parmesan or Pecorino
- 100 ml olive oil
- 20 ml oil (peanut oil)
- 1 tbsp pepper, green from the jar
- 1 tbsp lemon juice
- 2 garlic cloves
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
for pasta
Shell the pistachios and add them to the food processor along with the pine nuts, walnuts, and pitted olives. Peel the garlic, finely chop the cheese, and add it to the nut mixture along with the lemon juice and green pepper. Blend. Gradually add the oil until a smooth sauce forms. This goes perfectly with spaghetti or penne.
