Cookie Dough Energy Balls

Ingredients for 12 servings:

  • 30 g oat flakes
  • 75 g almond flour
  • 3 tbsp maple syrup
  • 70 g almond butter, preferably homemade or peanut butter, creamy
  • 1 tsp vanilla extract
  • 2 tbsp dark chocolate, vegan
  • possibly oat milk (oat drink)

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Combine the oats, almond flour, maple syrup, almond butter, and vanilla extract in a blender and blend for about 30 seconds until smooth. If the mixture is still too dry, add 1 tablespoon of oat milk (or an alternative); if it’s too wet, simply add a little more oats. Chop the chocolate into small pieces, fold it into the mixture, and form it into 12 small balls. These are perfect as a quick energy boost between meals and aren’t too sweet. Kids love them, too. Store in the refrigerator in an airtight container so they don’t dry out. They’ll keep for about a week if not eaten sooner. Each piece contains approximately 4.5 g carbs, 5.3 g fat, and 1.8 g protein, with 83 kcal.
