Colorful vegetables in a hearty, spicy sauce

Ingredients for 6 servings:

  • 2 cups cream cheese
  • 5 tbsp vegetable broth
  • Salt
  • pepper
  • Sauce thickener, light
  • 1 pack of mixed frozen vegetables (cauliflower, broccoli, carrot)

Bring the frozen vegetables to a boil with plenty of strong vegetable stock, reduce the heat so the vegetables are just simmering, and season with vegetable salt and a pinch of pepper. Stir in the cups of cream cheese. When the vegetables are tender enough or cooked through, stir in the sauce thickener until you get the desired consistency. Tip: This also makes a great alternative to making a vegetable casserole. Just add a few potato slices and a little more sauce thickener (to thicken it up a bit for the casserole), sprinkle the whole thing with cheese, and place it in the oven until the cheese has melted. You have a hearty vegetable casserole.
