Potato and celery mash

Ingredients for 4 servings:

  • 800 g potatoes
  • 400 g celeriac
  • 1 onion(s)
  • 500 ml vegetable stock
  • 2 tbsp butter
  • 2 tbsp horseradish
  • salt and pepper
  • Parsley
  • oil

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 50 minutes

as a side dish instead of mashed potatoes or as a meal with ham cubes or fried onions

Peel and dice the potatoes and celery. Sauté the diced onion in a little oil. Then add the broth and the diced onion and cook until tender. Drain and reserve the broth. Mash the vegetables and stir in the butter and horseradish, adding some of the reserved broth if necessary. Season with salt and pepper and serve with chopped parsley.
