Ingredients for 12 servings:
- 200 g flour
- 2 tsp baking powder
- 1 pinch of salt
- 1 pinch(s) of pepper
- ½ tsp turmeric
- 1 tsp rosemary, dried, chopped
- 100 g tomatoes, dried
- 2 peppers or chili peppers
- 2 tbsp Ajvar (spicy paprika paste), alternatively hot red pesto or similar.
- 75 ml oil
- 300 g quark (low-fat quark)
- 2 eggs
- Parmesan for sprinkling

Muffins with a twist…..
Mix the flour with baking powder, salt, and spices. Dice the sun-dried tomatoes and deseed and finely chop the chili or hot pepper pods. Add both to the flour mixture. Preheat the oven to 180°C and grease the muffin tin well; refrigerate if necessary. Whisk the ajvar with the oil, quark, and eggs, then briefly stir in the flour mixture by hand. Pour the batter into the tins and bake immediately for about 25-30 minutes. Served with spicy tomato soup, this makes a fiery main course to warm you up from the inside. Or a party hit, best served with a spicy dip.
