Ingredients for 4 servings:

  • 1 cup soybeans, yellow, dried
  • 1 tsp olive oil
  • ½ tsp salt
  • Cajun spice mix

Instructions

Working time approx. 25 minutes; Rest time approx. 8 hours; Cooking/baking time approx. 45 minutes; Total time approx. 9 hours 10 minutes

Roasted soybeans

Soak the yellow soybeans in water for eight hours. The beans will expand to three times their size, so use a suitable container. Then rinse the beans thoroughly again and pat dry with a tea towel or paper towel. Spread the beans on a baking sheet and add olive oil, salt, and seasoning. Mix well again and then place in the oven at 180°C (top/bottom heat) for 25–45 minutes, depending on the degree of roasting. Stir every 15 minutes. The beans should be well browned, otherwise they will be tough and not crispy. A protein-rich snack for between meals. Also ideal as a salad addition. Notes: The quantities given are sufficient for one baking sheet. If you want to make two trays, simply double the amount of ingredients. I use yellow soybeans for this recipe, which I bought from a Chinese shop. I don’t know if other varieties will work.
