Drunken sweet cherry jam

Ingredients for 1 servings:

  • 3 kg sweet cherries, peeled and weighed
  • 2 limes
  • 1 vanilla pod(s)
  • 200 ml liqueur, of your choice
  • 2 packs of gelling sugar, 3:1
  • possibly vanilla sugar

Instructions

Working time approx. 1 hour 45 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 1 hour 50 minutes

Distantly derived from the Black Forest species

Wash and pit the cherries. This recipe is based on 3 kg of pure fruit (without stones). Place the cherries in a large pot and simmer gently to allow the juice to form. Meanwhile, wash the limes, zest, and squeeze out the juice. Halve the vanilla pod and scrape out the seeds. Add the lime juice and vanilla seeds to the warm cherry juice (formed by simmering). Alternatively, you can use two sachets of good-quality vanilla sugar. Also add the lime zest, but adjust the amount to your liking, as the zest can be quite intense. Once the cherry juice has combined with the vanilla and lime, add the liqueur. I recommend Frangelico, but Amaretto or other popular liqueurs also work. Then add the gelling sugar and bring to a boil. Boil gently for 5 minutes. Test the setting and pour into screw-top jars. Then taste it thoroughly. Be careful, it’s addictive, as it’s very tasty.
