Fried asparagus salad

Ingredients for 4 servings:

  • 250 g asparagus, green
  • 2 tbsp butter
  • ½ tsp pink pepper
  • 3 tbsp balsamic vinegar
  • 30 g Parmesan or aged Gouda
  • salt and pepper
  • Basil leaves

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cut the cleaned asparagus diagonally into thin slices, fry in butter for about 5 minutes, season lightly with salt and pepper, add the pink peppercorns, and cook gently for another 2 minutes. Drizzle with balsamic vinegar. Grate the cheese into wafer-thin shavings and sprinkle over the top. Garnish with basil.
