Turkey breast with goat cheese crust

Ingredients for 4 servings:

  • 130 g goat’s cheese
  • 75 g almonds with skin
  • ½ tsp mustard
  • ½ tsp honey
  • ½ bunch rosemary
  • 700 g turkey breast or turkey schnitzel
  • 2 tbsp butter
  • 2 tbsp clarified butter
  • salt and pepper

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Juicy turkey breast with a goat cheese and almond crust

Roughly chop the almonds and toast them in a pan without oil. For the crust, mix the goat’s cheese with mustard, honey, and 2 tablespoons of melted butter. Wash the rosemary, shake it dry, and stir the rosemary sprigs into the cream cheese mixture. Mix in the toasted almonds. Season lightly with pepper. Preheat the oven to 200°C. Wash the meat, pat it dry, and fry it in clarified butter until crispy, about 2 minutes on each side. Season with salt and pepper. Remove from the pan and place in a baking dish along with any juices. Then spread the prepared goat’s cheese mixture over the meat and press it down lightly. You may also add a rosemary sprig to the dish for flavor. Place in the oven for 12-15 minutes, depending on the thickness of the meat. The turkey breast will stay nice and moist thanks to the juices in the dish and the cheese crust.
