Ingredients for 2 servings:
- 4 eggs
- 100 g bacon or cooked ham, cut into strips
- 100 g feta cheese
- 50 g olives, green
- ½ bunch chives
- ½ onion(s), diced
- some paprika powder
- salt and pepper
- some chives
- Oil for frying
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes
Sauté the onions in a pan until translucent. Then add the ham and cook. Add the olives. Crack the eggs into a bowl and season with salt, pepper, and paprika. Add the seasoned eggs to the pan with the other ingredients and cook until set. Just before they’re done, add the feta cheese, cut into small pieces. Serve on plates and sprinkle with chives.
