Meatballs in ajvar sauce with noodles

Ingredients for 4 servings:

  • 500 g minced beef
  • 2 tbsp breadcrumbs
  • 1 egg(s)
  • salt and pepper
  • Paprika powder
  • onion powder
  • garlic powder
  • 4 tbsp Ajvar, mild
  • 1 clove(s) garlic
  • 1 package tomatoes, pureed
  • 100 ml cream
  • 400 g pasta of your choice, I recommend whole wheat penne
  • 1 large bell pepper
  • Cayenne pepper
  • 1 pinch(s) of sugar

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

First, mix the ground meat with the breadcrumbs and egg. To make the breadcrumbs, I grate an old bread roll into crumbs. Season the ground meat mixture with salt, pepper, paprika, onion powder, and garlic powder and form into balls about 3 cm in size. Brown the meatballs and then remove from the pan. Slice the bell peppers and sauté. Add the crushed garlic, ajvar, passata, and cream. Season with salt, pepper, cayenne pepper, paprika, and a pinch of sugar. Add the meatballs to the sauce and simmer briefly. Cook the pasta according to the package instructions until al dente, drain, and serve with the sauce.
