Fried Squid Rings with French Fries and Crispy Rice Crackers

The perfect fried squid rings with french fries and crispy rice crackers recipe with a picture and simple step-by-step instructions.

The vegetable broth:

  • 250 g French fries, raw, approx. 5×5 mm cross-section
  • 4 leaves Rempeyek or Krupuk Udang, (ready-made crab bread)
  • 300 g Water
  • 10 g Vegetable broth, Kraft bouillon

For dip 1:

  • 3 tbsp Tomato ketchup
  • 1 tbsp Oyster sauce, (Saus Tiram)
  • 2 tbsp Fish sauce, light colored, (e.g. kecap ikan “King Lobster”)

For dip 2:

  • 3 tbsp Tomato juice
  • 1 tsp Sambal Bangkok ala Siu, (see appendix)
  • 1 tbsp Soy sauce, sweet, (kecap manis)
  • 1 tsp Lemon juice

For the dough:

Note:

  1. Squid rings are already available as frozen goods wrapped in batter. Krupuk that has already been baked is available in almost every Asian shop. Dried raw materials for Krupuk Udang as well. Rempeyek can be obtained from Holland or made yourself according to a recipe, see appendix.
  2. However, it is advisable to buy the squid coats fresh on the market and deep-fry them yourself.
  3. Mix the ingredients for the sauces and the dough homogeneously.
  4. Separate the fins from the coats and use them as pieces. Cut the coats diagonally into rings approx. 5 mm wide and cook in small portions, preferably in a pan, in the vegetable stock. As soon as they have stretched in a circle, remove them and add them to the batter mixture.

Frying:

  1. Heat the deep-frying oil to 200 degrees and add the dried Krupuk products in smaller portions. When the krupuk has bloomed, remove it from the oil immediately. Put the french fries frozen or thawed in the oil and fry with the lid until light brown-yellow. Drain and distribute on the serving plates. Add the squid rings in pieces. Fry until light brown, remove immediately from the oil and let drain briefly on paper towels. And then add the fries to the fries.
  2. Serve with the salt and the sauces, the squid rings and the crackers and enjoy.
  3. Go with a leaf salad with five island dressing and a cold beer.
