Ingredients for 4 servings:
- 400 g tortellini, fresh (possibly spinach-ricotta, 2 min cooking time)
- some fat for the pan
- 200 g cooked ham
- 1 pack of diced ham, low-fat
- ½ tbsp tomato paste
- 250 ml vegetable stock
- 250 g tomato sauce, pureed
- 250 g herb cream cheese
- 2 tsp oregano or herbs as desired
- 150 g cheese, grated
- salt and pepper
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes
Cut the cooked ham into cubes. Add a little fat to a high pan and fry. Add the diced cooked ham and the ham cubes to the pan and fry briefly. Add 1 tablespoon of tomato paste and fry for a few minutes until the tomato paste sticks to the bottom of the pan. Deglaze with the vegetable stock and bring to a boil briefly so that the tomato paste separates from the bottom of the pan. Reduce the heat slightly and add the passata, cream cheese and oregano and cook together until the cream cheese has dissolved. Season with salt and pepper to taste. Place the tortellini in a baking dish and pour over the ham, tomato and cream cheese sauce so that all the tortellini are covered with the liquid. Sprinkle everything with grated cheese and bake at 170 degrees Celsius on the middle rack for 15 minutes. If the cheese is too light for you, you can set the oven to grill for 2-3 minutes; then the cheese will look really delicious and a bit crispier.
