Instructions
Working time approx. 20 minutes; Rest time approx. 5 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 37 minutes
With cooked ham and cheese
Spread the lightly toasted slice of bread first with butter, then with mustard, place on a plate, and set aside. Heat oil in a pan. Peel the jacket potato and cut 4 thick slices from the center. The remaining potato can be used for something else. Fry the 4 potato slices in hot oil until fried potatoes are golden brown. When golden brown, remove from the pan, place on a plate, and let cool. Preheat the oven to 180°C (top/bottom heat). Place the cooled fried potato slices on the slice of bread and cover with the cooked ham. Cut 4 slices of tomato, place them on the ham, and season with salt and pepper. Peel the shallot, cut into thin rings, and arrange them on the tomato slices. Finally, place the cheese slice on top. Place the toast on a wire rack lined with baking paper. Bake in the oven on the second rack from the bottom for about 10-12 minutes, depending on how brown you want the cheese. Arrange the fried potato toast on a plate, garnish and serve.
