Ingredients for 8 servings:

  • 300 g Mett (onion meat, preferably poultry), very fresh
  • 4 egg yolks, very fresh
  • 3 m.-large shallot(s), diced as finely as possible
  • 150 g gherkins, very finely diced
  • 150 g ham (smoked ham), very finely sliced
  • 2 tbsp chives, cut into very fine rolls
  • 1 tsp paprika powder, sweet or hot
  • salt and pepper
  • possibly chili powder
  • e.g. garlic, very finely chopped or garlic powder
  • e.g. bread(s) or rolls
  • some onions or spring onions, cut into rings
  • possibly chives, cut into rolls
  • some butter

Working time approx. 30 minutes; Total time approx. 30 minutes

quick to make and delicious as finger food

Combine all ingredients in a bowl and mix thoroughly. Season to taste, but season well. It’s important that the eggs are very fresh, as the yolks are eaten raw. This goes very well with fresh, crusty rolls or hearty farmhouse bread, but also on baguette slices. Spread the roll halves or slices of bread thinly with butter, then generously with the onion-cured meat. Garnish with 2-3 onion rings and perhaps some chives. The meat should be eaten soon; it has a very short shelf life.
