Vegetarian Chinese stir-fry

Ingredients for 2 servings:

  • 2 tbsp oil
  • 4 carrots
  • 1 bell pepper(s)
  • 2 stalk(s) leeks
  • 1 can of corn
  • 3 tbsp vegetable broth
  • 2 ports. Noodles (Mie-), approx. 3 nests
  • Soy sauce
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

with mie noodles and vegetables

Grate the carrots. Dice the bell peppers. Cut the leeks into small rings. Open the corn and drain. Cook the noodles. Heat the oil in a pan. Fry the carrots, bell peppers, and corn until the vegetables are tender, then sprinkle with vegetable stock. Add the leeks to the pan. Add soy sauce to the pan. Add the noodles to the pan. Season again with soy sauce and salt and pepper.
