Ingredients for 2 servings:
- 4 pollock fillets, frozen
- 1 lime(s)
- ½ small zucchini
- ½ bell pepper(s), red
- 1 spring onion(s)
- 1 garlic clove(s)
- 50 ml olive oil
- 1 tsp herbs, Italian or other mixed herbs
- 1 pinch of chili flakes
- 1 pinch(s) of salt and pepper
- 2 tbsp Panko or whole wheat breadcrumbs
- 50 g grated cheese, e.g. mountain cheese
- 1 egg(s)
- 30 g wholemeal flour
- ½ small zucchini
- ½ bell pepper(s), red

- 200 g cottage cheese
- 1 tsp herbs, Italian or other mixed herbs
- 1 pinch of chili flakes
- 1 pinch(s) of salt and pepper

easy and fast
Thaw the pollock fillets, then rinse and pat dry. Place the fish fillets side by side in a baking dish and drizzle with the juice of half a lime. Finely dice 1/2 a small zucchini and 1/2 a red bell pepper. Crush the garlic clove and finely chop the spring onion. Add the juice of the other half of the lime. Mix everything with olive oil, 1 teaspoon of herbs, salt, pepper, and a pinch of chili flakes. Let the mixture stand for an hour, but you can certainly skip this time. Just before spreading the mixture on the fish and pressing it down, stir in the panko or whole-wheat breadcrumbs. Preheat the oven to 180°C fan/convection oven. While the mixture is resting, prepare the fish patties. Finely dice 1/2 a small zucchini and 1/2 a red bell pepper, and finely chop the spring onion. Combine the egg, grated cheese, herbs, salt, pepper, chili flakes, whole-wheat flour, and cottage cheese in a bowl. Mix everything together and arrange in 6 small piles on a baking sheet lined with parchment paper. Place the fish and cheese slices in the oven for about 20-30 minutes. Every oven works differently, so keep an eye on the food. The cottage cheese will spread a little and should turn lightly brown. Of course, you can vary the dish, e.g., using different fish, different vegetables, or different spices.
