Leaf salad with orange dressing

Ingredients for 2 servings:

  • 2 orange(s), untreated
  • 100 g seasonal leaf lettuce
  • 2 tomatoes
  • 1 tbsp vinegar
  • 3 tbsp olive oil
  • coriander
  • salt and pepper
  • 1 tbsp almond(s) (flaked almonds)

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Wash the oranges in hot water, dry them, and finely grate some of the zest. Juice one orange, peel and segment the other. Whisk together the vinegar, fruit juice, orange zest, salt, pepper, and coriander. Whisk in the olive oil. Season the orange vinaigrette again to taste and add more seasoning if desired. Wash the lettuce leaves, spin dry, and tear the leaves into bite-sized pieces and arrange them on two plates. Wash the tomatoes, cut them into eighths, and place them on the lettuce leaves with the orange segments. Pour the sauce evenly over the top. Roast the almond flakes in a dry pan until golden brown, then sprinkle them over the salad.
