Ingredients for 8 servings:
- 1 kg minced meat, mixed
- 2 bell peppers, yellow and orange
- 2 cans of pizza tomatoes
- 2 cans kidney beans, rinsed well
- 2 onions
- 3 garlic cloves
- 2 carrots
- 2 chili peppers in cooking or tea bags
- 2 tbsp tomato paste
- 1 tbsp sugar
- 2 tbsp, heaped cocoa
- 100 ml red wine
- ½ tsp cumin powder
- ½ tsp oregano
- e.g. salt and pepper
- e.g. chili powder
- 3 tbsp olive oil
- ½ tbsp rosemary
Instructions
Working time approx. 30 minutes; Rest period approx. 1 day; Cooking/baking time approx. 1 hour 50 minutes; Total time approx. 1 day 2 hours 20 minutes
Fry the minced meat in olive oil in 4 batches. Season with salt to taste, then add the finely chopped garlic and onion and fry. Add the tomato paste and sugar and let it caramelize slightly. Deglaze everything with the red wine and let it reduce. Now add the thinly sliced carrots, the diced bell peppers, the pizza tomatoes, and the well-rinsed kidney beans. Also add the spices. Add the chili peppers in the spice or tea bag; you can remove these as needed and for the desired level of spiciness. Add the cocoa powder and let the chili simmer gently for 1.5 hours. It tastes best when it’s fully infused. Tastes great with a spoonful of sour cream and flatbread, or even a baguette or roll.
