Ingredients for 8 servings:

  • 8 large potatoes
  • 1 can of corn
  • 1 can peas
  • 4 tomatoes, diced
  • 2 bell peppers, diced
  • ½ bag(s) cheese (Gouda), grated
  • ½ bag(s) cheese (Emmental), grated
  • 80 g butter
  • 1 small bottle(s) of ketchup
  • 1 tube(s) mayonnaise
  • salt and pepper
  • Cayenne pepper
  • 5 slices of ham, diced

Working time approx. 10 minutes; Cooking/baking time approx. 55 minutes; Total time approx. 1 hour 5 minutes

Wrap the potatoes in aluminum foil and place them in the oven at 200°C (fan oven) for about 50-60 minutes. They’re done when you can easily cut them with a knife. Then everyone takes their potato and slices it crosswise, leaving 1 cm from the bottom of the plate. Mash the inside of the potato with a fork. Add a knob of butter, a pinch of salt, a pinch of pepper, 1 tbsp Gouda, and 1 tbsp Emmental, and mix everything together again with a fork (the cheese will be stringy). If desired, add peas, bell peppers, tomatoes, corn, and ham. If you like, you can finish with a dash of ketchup and mayonnaise. Without the mayonnaise and ketchup, this dish is actually quite good for a snack when you’re on a diet. Of course, you can also add other things to the potatoes, such as red cabbage.
