Ingredients for 4 servings:
- 250 g pretzel(s) or pretzel sticks, soft
- 250 ml milk
- 2 eggs
- 1 small onion(s)
- 20 g butter
- 1 tbsp parsley, or more to taste, freshly chopped
- 5 tbsp wheat beer, only the wheat beer foam
- salt and pepper
- nutmeg
- Oil, for frying
Instructions
Working time approx. 45 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 15 minutes
Remove the salt from the pretzel sticks or pretzels and cut them into approximately 1 cm cubes. Bring the milk to a boil and let it cool slightly. Then stir in the eggs. Season with salt, pepper, and nutmeg. Add the pretzel cubes. Finely chop the onion and sauté in the oil. Add them to the mixture. Brown the butter and add it to the mixture along with the parsley. Add the 5 tablespoons of wheat beer foam to the mixture. Mix everything thoroughly. Spread the mixture onto two sheets of plastic wrap and roll them into rolls approximately 5 cm in diameter. Then wrap the rolls in aluminum foil and twist at the ends. The rolls will then look like large candies. These rolls are then cooked in gently simmering water for approximately 30 minutes. Then remove them and cut diagonally into slices. The slices can also be browned in a pan with butter when they are cold. Tastes great with roasts and gravy. The rolls can also be stored in the refrigerator for a few hours before cooking in water, which saves time during longer cooking sessions.
