Ingredients for 3 servings:
- 600 g bell pepper(s), in various colors
- 150 g apple, preferably sour
- 1 large onion(s)
- 3 cloves garlic
- 25 ml extra virgin olive oil
- 1 tsp maple syrup
- 100 ml white wine, alternatively water
- 1 tsp oregano, dried
- herbal salt
- chili flakes
- Pepper, freshly ground
- Basil, some leaves cut into fine strips
Instructions
Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes
with apples
Peel the onions and garlic, dice the onion and slice the garlic. Remove the light-colored cores and seeds from the bell peppers and dice them. Core the apple and cut it into smaller cubes (I used two smaller, not very ripe apples). Heat the olive oil in a saucepan and add the onion, garlic, and apple. Sauté for about 5 minutes. Then deglaze with the white wine/water, bring back to a boil, and add the bell peppers, maple syrup, and oregano. Cook for about 8–10 minutes. The vegetables should still have a bite. Season to taste with herb salt, chili flakes, and pepper. Sprinkle with the basil strips before serving.
