Salmon and spinach casserole

Ingredients for 4 servings:

  • 6 fish fillets (salmon fillets)
  • 1 pack of spinach (can also be prepared with fresh spinach)
  • 1 onion(s)
  • Bacon or ham
  • lemon(s)
  • Salt and pepper (from the mill)
  • Cheese, grated
  • 1 cup cream (preferably low-fat)

Salmon and spinach casserole with rice

Place the salmon fillet in a greased baking dish, season with salt and pepper, and drizzle with a little lemon juice. Cut the bacon into small cubes and fry in the pan. Add the chopped onions, sauté briefly, and then add the spinach. Let everything simmer gently for 2-3 minutes while stirring. Add the cream and spread it over the salmon fillet. Sprinkle with some grated cheese (preferably aged Gouda, which is a bit more flavorful). Bake the casserole in the oven for about half an hour and then serve with rice or fresh baguette.
