Pangasius in a bed of rice

Ingredients for 4 servings:

  • 550 g rice, cooked
  • 4 fish fillets (pangasius, approx. 500 g)
  • 450 g creamed spinach (frozen)
  • 100 g bacon or ham, diced
  • 100 g feta cheese
  • 2 onions, diced
  • 2 garlic cloves
  • oil
  • salt and pepper
  • lemon juice

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cook rice according to the package instructions. Heat oil in a pan, fry diced onions until translucent, and add the bacon. Then add the creamed spinach and sauté until thawed. Season to taste with salt, pepper, and garlic. Drizzle the pangasius fillet with lemon juice and season with salt and pepper. Cut the feta cheese into small cubes. Spread the cooked rice in a greased baking dish and place the pangasius fillet on top. Spread the spinach evenly on top and finally sprinkle the feta cheese over it. Bake in a hot oven at 200°C for about 30 minutes. Serve with lamb’s lettuce and homemade garlic croutons and a dressing made from oil and white balsamic vinegar.
