Pangasius in a bed of rice

Ingredients for 4 servings:

  • 550 g rice, cooked
  • 4 fish fillets (pangasius fillets) approx. 125 g each
  • 450 g creamed spinach, frozen
  • 100 g bacon, diced
  • 100 g feta cheese
  • 2 onions, finely chopped
  • 2 garlic cloves, finely chopped
  • salt and pepper
  • lemon juice
  • oil

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Heat oil in a pan, fry the onions until translucent, then add the bacon cubes and fry. Add the spinach, cover the pan, and sauté over low heat until the spinach is thawed. Season with salt, pepper, and garlic. Wash the pangasius fillets, pat dry, drizzle with lemon juice, and season with salt and pepper. Cut the feta into small cubes. Spread the cooked rice in a greased baking dish and place the pangasius fillets on top. Spread the spinach evenly on top and finally sprinkle with the cheese. Bake in the oven at 200°C for about 30 minutes, then serve hot. Serve with lamb’s lettuce.
