Ingredients for 4 servings:

  • 100 g butter, soft
  • 100 g flour
  • 2 eggs
  • 1 tsp salt
  • pepper
  • nutmeg
  • e.g. meat broth, clear, or ham broth

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Soup garnish

Bring the broth to a boil in a wide saucepan. Cream the butter until fluffy; it should look perfectly white. Add the eggs to the fluffy butter and beat with a hand mixer for about 1 more minute. Then add the flour, salt, pepper, and nutmeg. Turn off the burner on which the broth is standing, but leave the broth on the stove. Using 2 teaspoons, form small dumplings, pressing down as firmly as possible. Add these to the soup, which has stopped boiling, and let them simmer for about 10 minutes.
