Ingredients for 4 servings:
- 125 ml milk
- 60 g butter
- 60 g flour
- 2 eggs
- Salt
- nutmeg
- 1 liter meat broth
- Parsley
Instructions
Working time approx. 10 minutes; Total time approx. 10 minutes
Soup garnish
Bring the milk, butter, and spices to a boil. Add the flour all at once and whisk vigorously until the mixture pulls away from the bottom of the pan (like choux pastry). Remove from the heat and gradually stir in the eggs. Using two teaspoons, scoop out small dumplings and let them simmer in the hot broth for about 10 minutes. Garnish with parsley and serve.
