Lamb's lettuce with ham cubes and pine nuts

Ingredients for 4 servings:

  • 1 pack of lamb’s lettuce
  • 100 g diced ham
  • 50 g pine nuts
  • 4 tbsp pumpkin seed oil
  • 4 tbsp raspberry vinegar
  • 4 tbsp honey
  • 1 shot of cognac if needed
  • 1 pack of grated Parmesan cheese

Instructions

Working time approx. 15 minutes; Rest time approx. 15 minutes; Total time approx. 30 minutes

Wash the lamb’s lettuce and spin dry. Fry the ham cubes until crispy, remove, and then toast the pine nuts until golden brown. Let cool. For the dressing, whisk the oil, vinegar, and honey until the individual components are blended. If desired, add a small dash of cognac. Transfer everything to a bowl. Add the lamb’s lettuce and mix well. Sprinkle with Parmesan cheese, if desired.
