Ingredients for 3 servings:
- 350 g sausage (e.g. Wiener, Bergsteiger, leftovers …)
- ½ pack of pasta
- salt water
- salt and pepper
- 1 egg(s)
- some milk
- 1 large onion(s)
- some oil
- some parsley

Mom’s way
First, I cut the sausage into small pieces (very small, because I have a small child), then I chop the onion. I put a pot of water on the stove and wait until it boils. Meanwhile, I put a pan with a little oil on the stove. Only when the pasta water is boiling do I add 1 teaspoon of salt. Add the pasta to the water. Of course, the oil in the pan is already hot, and I can lightly fry the onion. Stir the pasta and then add the sausage to the pan. Taste the pasta; as soon as it’s ready to eat, drain it, and add it to the pan, stirring well. Whisk the eggs with a splash of milk and add them to the pan. Now add some salt, pepper, and chopped parsley, if desired. Stir and wait until the egg sets. Taste and season again with salt and pepper if necessary.
