Spelt bread with carrots without yeast

Ingredients for 1 servings:

  • 500 g spelt flour
  • ½ tsp baking soda
  • 1 packet of baking powder
  • 2 tsp salt
  • 150 g mixed seeds, e.g. pumpkin seeds, sunflower seeds, sesame, linseed
  • 2 tbsp millet
  • 200 g carrot(s)
  • 1 egg(s)
  • 350 g yogurt

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 15 minutes

Combine flour, baking soda, baking powder, salt, seed mix, and millet. Whisk together yogurt and egg, coarsely grate carrots. Add both to the flour mixture and knead thoroughly with the dough hook of a mixer. Knead the dough again by hand and shape into an oblong loaf. Brush with a little water. Bake at 180 degrees Celsius (350 degrees Fahrenheit) for 40-45 minutes. Tip: Add only half of the seeds and 1 tablespoon of millet to the flour mixture. Brush with water and spread the remaining half on the bread.
