Gnocchi with cherry tomatoes, garlic spinach and feta cheese

Ingredients for 4 servings:

  • 250 g cocktail tomatoes
  • 300 g young leaf spinach
  • 1 clove(s) garlic
  • 1 onion(s)
  • 800 g gnocchi
  • 100 g cream
  • 0.1 liters of milk
  • 200 g feta cheese
  • salt and pepper
  • 2 tbsp oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Wash the tomatoes. Wash the spinach, removing any long stems. Drain the spinach well. Peel and finely chop the garlic. Peel and finely dice the onion. Heat the oil in a non-stick pan. Fry the tomatoes, gnocchi, and diced onion for about 3 minutes, until the tomatoes burst. Add the spinach and garlic and season with salt and pepper. Finally, add the cream and milk, bring to a boil, and season again to taste. Transfer the gnocchi to 4 small baking dishes. Crumble the cheese and sprinkle over the top. Bake the dishes in a preheated oven (electric oven: 225°C/fan: 200°C/gas mark 4) for 5–8 minutes. Remove from the oven and serve immediately.
