Ingredients for 8 servings:
- 4 tsp peppercorns (black)
- 4 tsp oregano
- 2 star anise
- 2 tsp coriander
- 1 tsp fennel seeds
- 3 tbsp paprika powder, sweet
- 2 tsp brown sugar
- 1 tsp cayenne pepper
- 1 tsp cinnamon

Spice mix – also a great gift
First, finely grind the whole/coarser spices (e.g., pepper to fennel) in a food processor, then blend everything together. This mix goes well with virtually anything fried or grilled that could use a little aromatic seasoning: fried fish, shrimp, grilled meat, potato wedges, hearty grilled vegetables (squash, potatoes, peppers, etc.) – it’s best rubbed in or marinated (mixed with a little oil or something similar) and let it soak in for a maximum of 1 hour (or omit the sugar—then it can soak in longer).
