Tomatoes with ground elder filling

Ingredients for 4 servings:

  • 8 m.-large tomato(s)
  • 2 handfuls of ground elder, stems and leaves, cooked
  • 2 eggs
  • salt and pepper
  • Fat for the mold

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Cut the tops off the tomatoes and scoop out the pulp and juice with a spoon. Mix the cooked, finely chopped ground elder with the pulp, add the eggs, and season with salt and pepper. Fill the tomatoes with the mixture. Place the tops on top, place the tomatoes in a greased, ovenproof dish, and bake for 30 minutes in an oven preheated to 200°C.
