Raclette cheese salad with cucumbers and onions

Ingredients for 4 servings:

  • 5 slices of raclette cheese
  • 2 onions
  • 2 cucumbers (country cucumbers)
  • 3 cm ginger, finely chopped
  • 1 chili (jalapeno)
  • 2 tbsp fish sauce
  • 1 tbsp maple syrup
  • 2 tbsp lime juice
  • 1 tbsp apple cider vinegar
  • 1 tsp pepper

Instructions

Working time approx. 20 minutes; Rest time approx. 30 minutes; Total time approx. 50 minutes

Cut the cheese slices into 0.5 cm cubes, or even smaller if possible. Finely slice the onions and the cucumbers. Finely chop the chili and ginger. Mix all ingredients together and let stand at room temperature for 30 minutes.
