Curry apple soup

Ingredients for 4 servings:

  • 2 apples, pitted and unpeeled, cut into pieces
  • 1 large onion(s), peeled and cut into large pieces
  • 1 garlic clove(s), peeled and diced
  • 1 tbsp clarified butter
  • ½ tbsp curry powder
  • ½ liter chicken broth
  • 1 pinch of salt
  • 1 pinch(s) black pepper, ground
  • 1 pinch of clove powder
  • 1 dashes lemon juice
  • ½ tbsp chives, chopped

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Sauté the onion and garlic in clarified butter, add the apple pieces. Sprinkle with curry powder, stir, and pour in the broth. Simmer for about 25 minutes over low heat, until the apples have broken down. Purée the soup and season with salt, pepper, and cloves. Serve sprinkled with chives.
