Tom’s Berry Dream Made of Raspberry Ice Cream, Forest Berry Cake and Cherry Rum Foam

- 600 g Raspberries
- 50 g Sugar
- 600 g Flour
- 300 g Sugar
- 200 g Butter
- 30 g Oatmeal
- 500 g Frozen forest berries
- 100 g Cherries
- 30 ml Rum
- 2 Pc. Egg yolk
- 1 Pr Sugar
- Pistachios
- 1 shot White wine
- Puree the raspberries with sugar and a little warm water and place in an ice cream maker.
- Mix the flour with sugar and butter and knead into a dough. Spread three quarters of the batter on a baking tray and sprinkle with oat flakes.
- Spread the frozen forest berries on top and sprinkle with the remaining batter, which will serve as a crumble. Then put everything in the oven at 180 degrees for 20 minutes.
- Meanwhile, cook the cherries with the rum. Mix egg yolks with sugar and white wine and beat everything together in a metal bowl over a double boiler.
- When everything is ready, serve together, the cake may still be lukewarm.
